PERSIMMON PUDDING Submitted by: TrophyHunter 1 quart milk 1 cup persimmon pulp 1 cup flour 3 eggs 1/2 cup sugar 1 teaspoon baking powder 1/2 teaspoon salt Rub persimmons through a colander until you have one cup pulp. Beat eggs, add to milk, add sugar, and persimmon pulp. Sift flour, salt and baking powder together and add to the first mixture. Beat until smooth. Pour into greased pan and bake in moderate oven for 45 minutes. Serve warm with hard sauce (recipe for hard sauce below). |
